Simple, yummy cookies?

Anyone has a recipe for simple to make, yummy cookies with ingredients that are easy to find? I'm in the mood for baking, but I don't want too much work involved.

    Linds: I have a really easy recipe for "Miracle Cookies" that contain no flour! Let me know if you like peanut butter cookies and I'll dig it up for you! smile.gif

    Chocolate Chip Cookies
    Ingredients
    1 & 1/8 cup flour
    1/4 tsp baking soda
    1/2 tsp salt
    1/2 cup brown sugar
    1/2 cup sugar
    1 egg beaten
    1 tsp vanilla
    1/2 lb chocolate chips

    1.Pre-heat oven to 350* F
    2. Sift the baking soda,the flour,and the salt together
    3.Cream the butter,sugar,and brown sugar together.
    4.Add egg and vanilla
    5.Beat thoroughly
    6.Add the sifted ingredients
    7.Put in the chocolate chips
    8. Grease the cookie sheet
    9.Drop cookies from a teaspoon onto cookie sheet
    10.Bake 10 minutes

    makes 50 cookies smile.gif

    Can you say EASY?

    Cake Mix Cookies
    Ingredients
    1 (18.5 ounce) package yellow cake mix
    1 teaspoon baking powder
    2 eggs
    1/2 cup vegetable oil
    1 cup semisweet chocolate chips or other goodies

    Directions
    1 Preheat oven to 350 degrees F (175 degrees C).
    2 In a medium bowl, stir together the cake mix and baking powder. Add eggs and oil, then mix until well blended. Stir in chocolate chips or your choice of additions. Drop by rounded spoonfuls onto the cookie sheet.
    3 Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

    Here are a couple of recipes that I can vouch for. I normally bake brownies rather than cookies, though. smile.gif

    Amish Sugar Cookies

    This cookie is a very soft sugar cookie that is made with a batter rather than a dough, but is really good.

    Ingredients:
    1 1/2 cups vegetable oil
    1 1/2 cups white sugar
    2 eggs
    4 cups all-purpose flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1 cup buttermilk
    3/4 teaspoon salt
    3/4 teaspoon vanilla extract

    Directions:

    Preheat oven to 350 degrees F (175 degrees C).

    Mix together vegetable oil (yes, 1 1/2 cups of vegetable oil), sugar and eggs. Mix in the flour, baking soda, baking powder, buttermilk, salt and vanilla. Pour teaspoon-sized amounts of batter onto cookie sheets, leaving plenty of room in between. These cookies will puff up and get large. Bake for 8 to 10 minutes. DO NOT OVERBAKE!

    Makes 5 - 6 dozen

    Grandmother's Oatmeal Cookies

    Ingredients:

    3 eggs
    1 cup raisins
    1 teaspoon vanilla extract
    1 cup shortening
    1 cup brown sugar
    1 cup white sugar
    2 1/2 cups all-purpose flour
    1 teaspoon salt
    2 teaspoons baking soda
    1 teaspoon ground cinnamon
    2 cups quick cooking oats
    1/2 cup chopped walnuts

    Directions:

    1. Beat eggs and combine with raisins and vanilla. Let soak for at least an hour.
    2. Cream shortening (I use butter flavored shortening) and sugars together. Sift dry ingredients into sugar mixture. Mix well. Blend in remaining ingredients.
    3. Shape into balls and place on ungreased cookie sheet. Bake in 350 degrees F (175 degrees C) oven 10 -12 minutes. Do not overbake.

    Makes 4 dozen

    I think I have the same recipe as Peppy offered. These cookies take no time at all to make and they are delish!

    1 cup peanut butter (creamy or crunchy)
    1 cup sugar (brown or white)
    1 egg

    that's it!!
    Preheat oven to 350. Mix three ingredients together and drop onto ungreased cookie sheet in small teaspoons. flatten with fork in a criss-cross formation. Be sure to space these suckers at least two inches apart, as they spread out really well. Bake in oven 10-12 min.
    ****IMPORTANT****
    Ok the trick to these cookies is that you have to let them cool off ON the sheet for at least 10 but usually 15 min otherwise they just crumble. I usually use two sheets and one cools while the other's baking. Also be careful of the done-ness of the bottoms as they will continue to bake while on the sheet cooling, so watch those bottoms!

    Yep! That's it! I think my recipe calls for a little vanilla though. And depending on what kind of peanut butter you use, the dough can be a little too soft. Then I might add a T. or so of flour. I also dip the fork in flour to make the criss-cross pattern so the fork doesn't stick as bad. I LOVE these cookies! biggrin.gif

    wow, my cookies never turn out thin and the fork doesnt stick, but I also use super chunky. And I bet the climate and alititude in the area we live also has some to do with it. Good cookies reguardless!

    Spunky...Maybe that's the difference. I only use Jif creamy p.b. when I make 'em. I know I'm weird, but I do not like peanuts in my peanut butter cookies! biggrin.gif

    OMG ladies... I completely forgot about this post! So many great recipes! Too bad our oven is currently broken.. ahh! mad.gif I don't supposed anyone knows any recipes for oven-less cookies? wink.gif

    Q-Curly-Q: LOL! biggrin.gif My husband's favorite cookies require NO OVEN!!!! Here's the recipe:

    BOILED COOKIES
    1 c sugar
    1 stick butter
    1 c. milk
    5 tablespoons cocoa
    2 1/2 c. oatmeal
    1/2 c. peanut butter
    1/2 c. pecans (optional)

    Mix first 4 ingredients. Boil 1 1/2 minutes. Remove from heat and add remaining ingredients. Blend well. Drop on waxed paper. Cool and EAT!!! smile.gif
