i lurve my artichokes :)

anyone have any great recipes to share? the local market has the most beautiful huge tasty artichokes right now and i'm looking to add to my collection of artichoke recipes

    they are still 2.99 each for the last 2 years. ive quit buying them.

    I still buy them, even at the outrageous prices. They're so good.

    I like to roast them if I have the oven on for something else.

    i usually boil/steam them and then dip them in lemon butter. they take about 45min to an hour.

    how long do they take in the oven?

    Maybe 30 mins in the oven.

    I boil/steam, too, sometimes. I make a sauce w/ mayo, lemon, garlic and chopped rosemary.

    Par boil
    Stuff with mixture of bread crumbs, parmesan cheese,lemon parsley garlic
    Baked them 25 min @ 350.

    Wrap in saran wrap and nuke for 3-4 minutes.
    Dip in lemon garlic butter.

    Own concoction: smash and mince a garlic bulb, squeeze half a lemon, add salted or unsalted butter (or butter spread of choice) - nuke until bubbly. Dip your artichoke leaves and enjoy!

    i'm going to alberstons tomorrow..

    i couldn't believe they were $4 at whole foods on sunday, i usually pay about $3 at the fresh market!

    okay, please explain..

    you trim the artichoke, and then just wrap it in saran wrap and it cooks in the microwave like that? do you add any water or anything?

    i usually boil them in water, and then either eat them as is, dipping the leaves in some garlic butter type sauce.. or i then proceed to slice them in half, scoop out the thistle, stuff the leaves with garlic, parsley, olive oil, parmesan cheese concoction, and bake in the oven..

    i also have a great risotto recipe that calls for artichoke, but i'm so lazy i usually just use the canned ones for that :)

    anyone else fry artichoke? i haven't been successful using a fresh one, so we always end up using canned hearts..
