A question about veggies.....

I know a lot of people sneak pureed' veggies into their pasta sauces, say, mothers whose kids won't eat veggies. And it sounds danged good.

My question is, do you COOK the veggies first? I've read many articles about pureed vegetables in pasta sauce, but carrots are not soft at all.

I have a jar of spaghetti sauce that needs to be finished up, and I have carrots, little yellow summer squash, and zucchini to add to the sauce.

    Yes, steam them down. The squash and zucchini can be crisp/tender, but the carrots should be cooked down quite a bit - then just thrown them in the blender or food processor.
