Oranges in Armagnac

This is a common dessert here, though technically not a salad. It's easy.

Peel oranges and remove pith.
Slice oranges and arrange in glass serving bowl. Pour Armagnac over top.

This is a fruit salad that is good this time of the year especially, though once it is made, it should be eaten the same day.

Core and Cube 2-4 apples (peel skin - optional)
One can of mandarin oranges (drained)*
One can of pineapple cubes (drained)*
    One or two sliced bananas
    Seedless grapes (red or green)
    some chopped walnuts

Get a container (half pint or pint size) of real whipping cream. (I can't remember off hand exactly what you add to it -- (tsp) vanilla and possibly sugar.) Whip with electric mixer. Fold above fruit into the whipping cream. Chill. Serve.

I have found if you let this sit overnight the fruit tends to make the whipped cream runny -- though I have eaten it the second day.

When putting in grapes, bananas, apples -- I usually just check to see how filled up the bowl is and how much salad I need to make to determine how many to use.

    * Make sure you drain these well so they don't make your salad soggy.

Hey! My mom makes this AWESOME fruit salad she calls "Ambrosia". I'm too doggoned lazy to get up and find the recipe right now, but it's similar to this one:

    Ingredients

1 (8 ounce) container frozen whipped topping, thawed
    2 1/2 cups shredded coconut
    1/2 cup chopped walnuts
1 (8 ounce) can fruit cocktail, drained
1 (8 ounce) can pineapple chunks, drained
1 (11 ounce) can mandarin oranges, drained
    3 cups miniature marshmallows
1 (10 ounce) jar maraschino cherries, drained (optional)
    1 teaspoon ground nutmeg
    1 teaspoon ground cinnamon

    Directions
In a large bowl, combine the whipped topping, coconut, chopped nuts, fruit cocktail, pineapple, mandarin oranges, marshmallows, cherries, nutmeg and cinnamon. Mix together well and refrigerate for 30 to 45 minutes.

I'll look for Mom's recipe tomorrow. If it's vastly different I'll post it. icon_smile.gif It's always an enormous hit at family affairs. icon_smile.gif

Um, okay this won't be healthy but it was a comfort food from growing up. My mom's Columbian friend used to make an ambrosia-type salad with sour cream, condensed milk, canned fruit cocktail, canned mandarins & mini marshmallows.

The mixture sat overnight and the marshmallows aborbed the thick sauce until they were spongy. YUM!

A couple of cans of fruit coctail, drained, mixed with a container of whipped creme, and a box of cream cheese. mmmm icon_smile.gif
