Does anyone have any good lasagna recipes? I've never made it before, but I'm planning to make some next weekend.

    I like to make vegetarian lasagna.

    500g frozen chopped spinach
    200g feta cheese cubes
    1 large onion diced
    4 cloves of garlic crushed or sliced
    500ml tomato puree
    lasagna sheets
    1 egg
    cheddar cheese to grate on top
    1 teaspoon of paprika
    1 teaspoon cracked black pepper
    fresh basil
    olive oil

    Defrost the spinach and drain off any water, mix in 3/4 of the feta, 1/2 the onion and the egg thee set aside.

    saute remaining onion with garlic in olive oil until transparent and fragrant, add paprika and pepper and saute for a further minute or so. Add tomato puree and simmer for a few minutes.

    Layer filling, lasagna sheet then sauce as you usually would with a lasagna.
    Top with cheddar cheese and remaining pieces of feta. Cook in oven on 350f (or 180c) for about an hour or until the lasagna sheets are soft (test with a skewer). Chop up fresh basil and serve on top, alternatively you could mix it into the sauce but the flavor is stronger if its fresh. Also you could add extra veg into the sauce, like sweet potato, capsicum or zucchini.
