Preparing baked chicken

What do you do with your skinless/boneless chicken breasts?

SO likes them breaded, but I don't want to eat breaded chicken all the time. I try to season them with different things, but they still aren't very flavorful. Last night was a little better... I spread spicy brown mustard on them. SO added chili powder to his.

Is it better to marinate them, or fry them on the stove? (I don't actually know how to do either of those things, but it can't be difficult, right?)

Bear with me if I ask stupid questions, I come from a family that subsists on boxed/frozen food so I'm trying to learn how to cook. :lol:

    i usually marinate over night. my marinade consists of of crushed up garlic- with salt and oregano, and i also use Adobo Accent with Saffron (i dont like my chicken looking too pale). i also squirt a bit of soy sauce. i actually crush my garlic in an old school dominican morter/ pestle.

    Get breasts with bone. Bones equal flavor and also make for moister meat.

    You can bake them in the oven with italian dressing or really any sauce or marinade. I found a ton of recipes just by browsing recipezaar.com. I've got a few if you want me to link them. I've pretty much taught myself to cook by that site and trial and error.

    Oooh I love recipezaar, I've found some great recipes there.

    OP: Rub your chicken with the following mix:
    olive oil, salt, paprika, cracked pepper. Quarter a couple of potatoes, add a few whole tomatoes. Bake everything covered until the chicken and potatoes are cooked. Mix a little of the juice in the pan with some pesto (home made or jar) and serve over the chicken with some asparagus.

    Recipezaar is great!!! I have learned how to do so much from that site.

    Utopia if you are looking to expand your recipes but still keep it simple I have quite a few. Cooking for 4 can't take long in my house. I love to help people start out. I'm not the best cook but I love to keep learning.

    I don't have a crockpot yet, but hoping to get one soon since they're relatively inexpensive. :)

    Jess and anyone else -- I'd love to have more recipes! Maybe this can be a general reference thread for anyone else looking for ideas. Chicken can get boring when you keep preparing it the same way.

    Mdrb - Your recipe sounds so good! What do you bake it in, a casserole dish?

    Betty Crocker has a website with a ton of recipes -- I found one for chicken pot pie, and it's really good if you add in some seasonings. I'm all about cutting corners, since I don't always have time to cook from scratch.

    I'm not a big fan of skinless chicken breasts but this is one of my favorite recipes. Easy, cheap, and it add lots of flavor to the chicken.
    In a big casserole dish, throw in some skinless boneless chicken, a chopped onion, a can of sweet potatoes with some of the liquid, a can of peaches with some of the liquid (you can also use pineapple), honey, brown sugar (I use alot but don't measure anything so just add things to taste), salt, pepper.
    Bake at 350 for hour or so, til chicken is done and liquid thickens.

    This can be pretty healthy if you use fruit in light syrup and Splenda brown sugar.

    Yay, thanks for all of the recipes!

    The boy prefers skinless/boneless chicken... he doesn't like eating meat off the bone. It grosses him out. :lol: I eat it because it's healthier.

    My SO doesn't like white meat since he thinks its too dry but it's my favorite. I usually season with garlic pepper, seasoning salt, crushed red pepper flakes and marinate overnight with Italian dressing. Its kind of spicy but if you don't like spicy food leave out the crushed red pepper flakes.

    Also I alternate with different marinades by KC masterpiece. The carribean jerk and lemon pepper marinades are my favorite and really give the chicken some flavor.

    This is an old thread, but if you're still looking for ideas, here are a couple:

    Put chicken breast in a casserole dish and pour salsa over the top. Bake until done and serve over rice.

    Pour a good amount of either dijon mustard or honey dijon into a quart sized ziplock bag. Add chicken breast and mush together until chicken is coated. Pour into a baking dish, and top with a few bread crumbs and some parmesan cheese. Bake until done.

    I like the lowerys marinades. I wrap my chicken breasts in foil and pour the marinade over them bake for 20 mins. I like the honey dijon the best. The marinades are very low in calories to.
