Avocados

Anyone here love avocados? It's my new drug. I love them! There is one sitting on my desk but it's not ripe yet. I'm going crazy. I know they are too fattening to eat everyday, so maybe just half everyday. My boyfriend got me started on this. Damn him! I usually just eat it with lemon juice, salt and pepper. I've had it with olive oil too instead of the lemon juice.

    Yumm!! I love avocados!! I eat them plain a lot of times and sometimes I put them in salad.


    Now I want an avocado...I may just have to go to the store and get one!!

    I love them. They are high in fat for a veggie, but they are no-carb, so I eat them with abandon. Dipped in a little full-fat Russian dressing....Mmmmmm...mmmmm...

    Here it is:

    Native American Posole

    1 chopped jalapeno
    2 tablespoons vegetable oil
    1 medium onion, diced
    1 red bell pepper, seeded and diced
    1 small zucchini, diced
    1 large tomato, cored and diced
    2 cloves garlic, minced
    2 cups canned white hominy
    1 cup pinto beans
    3 cups water or vegetable stock
    2-1/2 tablespoons tomato paste
    2 teaspoons paprika
    1-1/2 teaspoon dried oregano
    1/2 teaspoon ground black pepper
    1/2 teaspoon salt
    1 avocado

    Heat the oil in a large saucepan and add the vegetables and garlic. Saute 6 to 8 minutes until the vegetables are tender. Add the hominy, beans, water, tomato paste, and seasonings and simmer 45 minutes to an hour, stirring occasionally.

    After the soup is finished, core and dice the avocado and add it to the soup.

    That's it!

    I LOVE avocados! I pretty much hate salad but if you add some avocado, I will most definitely eat it.

    I made some amazing guacamole last night. I love them too...we all do. I put them in salads of just slice em as that nights veggie. If I slice I'll add kosher salt and pepper or Italian dressing. I love them on burgers and turkey sandwiches. Last time I ate tortilla soup there was some in there and it was amazing. And Z is right about the BLT...yum.

    I LOVE avocados! SOOOOOO good. I like them on crusty bread with tomato, salt and lime. Simple and delish.

    Also, just started using them as a substitute for mayo in tuna salad. DELICIOUS!!!!

    But it's a better kind of fat than any animal fat and has other health benefits. I never ate avocados- the look, smell... was gross to me. One day last year I tried a bit of guac- and was hooked. I can't eat them straight yet, but a bit of guac mix (high sodium though) or natural with sea salt, lime juice, garlic and cilantro is pretty darn good. I'll mash one up with seasoning with a few chips and that will be my lunch.:thumbleft:

    I like to make a tomato and avocado salad - just slice them both up and lay the avocado slices on the tomato slices (like you would with a tomato/mozzarella salad) and then sprinkle with salt & pepper, olive oil if you feel like it.

    I also like them sliced on sandwiches - my fave is with hummus, spinach, and tomato.

    And I make homemade guacamole every time we have a party. Super-easy and always a hit.

    I love avocados, but don't get to eat them often. I'm always so amazed that people use them in their hair, because I could never! I'd eat it before I even got the chance. I want one now :sad5:

    I feel the same way. Honey also. Some people keep a squeeze bottle of honey in their shower to use on their hair...when I tried it, I found myself taking honey-hits and ate more than ever went on my hair. It was very sad.

    Mmmm...I like them in many of the ways people have already said (especially on BLTs!), but I really love to mix up some balsamic vinegar, garlic salt, and olive oil and let avocado slices marinade in that for a few minutes before eating them...so tasty!!

    How much do you eat? I'm worried about the high fat content. But it would be hard to not eat a whole one if I started. My avocado at work is finally ripe and ready to eat today!

    I can eat 1 a day, all by myself. I slice or dice half an avocado and have it with my breakfast. I eat the other half with my lunch or dinner. I don't worry too much about the fat, it is the "good for you" monounsaturated fat that lowers cholesterol levels. I don't buy into the notion that all fats are bad for you.

    I've been eating avocados my whole life and have never worried about the fat content. Come to think of it, I rarely worry about fat in my food. Fat is good. It makes you feel full and satisfied.
    I love a sandwich of thinly sliced avocados sprinkled with sea salt, a bit of freshly ground pepper, and lemon juice (especially if Meyer lemons are around) on crusty bread.
    That and parsnips browned in butter and drizzled with maple syrup are my two favorite, unusual ways to start the day.

    I know it's good fat, but it's still fat and extra calories. I am trying to lose a few or maintain at the least. If I add this daily, I'll have to cut somewhere. I'd hope that it might make me eat less at other times since it's high in fat, but knowing me...

    Yeah, because of the high fat content, they are more calorie-dense than some other foods (and most othe fruits & veggies). You have the right idea though, that if you want to add one daily you just need to cut back a little somewhere else. It's like nuts and nut butters - calorie dense but still good for you.
