Banana Bread/Muffin Recipes

Does anyone have any good banana bread or muffin recipes? I have some ripe bananas I'd like to use up before they get too gross. Thanks!

    here ya go:

    Tips: If you use large bananas, incorporate 1/3 cup more flour.
    All-purpose flour is suggested.

    Banana Bonanza Bread

    6 ripe bananas
    1 cup sugar
    1 tsp. vanilla extract
    2 c. all-purpose flour
    1 tsp baking soda
    1 tsp. baking powder
    cinammon - amount you desire!

    Place peeled bananas, sugar, vanilla extract into a large mixing bowl.
    Mash or mix (with mixer) these ingredients until the mixture resembles
    cake batter with little banana remnants or pieces. (*NOTE* Make sure
    bananas are completely mashed. There SHOULD be banana remnants or tiny
    pieces of bananas in mixture!)

    Next,in a separate bowl, sift flour, baking soda, and baking powder
    together. Then, add these sifted ingredients to the delicious banana
    mixture! Mix until a dough consistency is reached. Pour into a 9x9 baking
    dish. (*NOTE* A glass dish works wonderfully, too! Also, we've never
    coated or sprayed our baking dish with cooking spray before we've added
    the mixture to the baking dish, and it has turned out perfect each time!)

    Sprinkle cinnamon on top of mixture if you desire! YUM! Pre-heat oven to
    350 degrees. Once oven has reached 350 degrees, bake bread for 60 minutes.

    After the hour has passed, you SHOULD have Banana Bonanza Bread! ENJOY!


    Kona Inn Banana Bread

    2 1/2 C flour
    1 t salt
    2 t baking soda
    1 C softened magarine (or shortening)
    2 C sugar
    2 C mashed ripe bananas (4-6)
    4 egg, slightly beaten
    1 C chopped nuts - opt.

    Preheat oven to 350*. Grease and flour loaf pan(s).
    Stir and toss the flour, salt & baking soda.
    In a large bowl, mix the shortening, sugar, banana, eggs and nuts. Add to the combined dry ingreds. and stir until batter is thoroughly blended.
    Pour into prepared baking pan and bake for about 65-70 mins, or until a skewer comes out clean.

    Makes: 2 large loaf pans (bake 65-70+ mins)
    : 4 mini loaf pans (bake 45 mins)

    1/2 recipe makes:
    : 24 mini muffins (bake 15-17 mins)
    : 9 large muffins (bake 25 mins)

    This recipe is nearly impossible to over bake and dry out. It will get darker the longer it bakes.


    I use basically the same recipe as above, however I bake my banana bread in a bundt pan, makes for a nice appearance when sliced and will be very brown. I bake for about
    45 minutes on 375 or until toothpick comes out clean.

    Here is a quick and easy recipe from the Weight Watchers website. I made these muffins this evening and they are moist, delicious, and lowfat. The frosting is finger-licking good. Happy Baking!!


    Frosted Banana Bread Muffins

    3 tbsp vegetable oil
    2/3 cup(s) unpacked brown sugar
    3 large banana(s), or 4 medium, mashed
    2 tsp lemon peel, grated
    1 large egg(s)
    1 large egg white(s)
    2 cup(s) all-purpose flour
    1 1/2 tsp baking powder
    1 tsp ground cinnamon
    1/2 tsp table salt
    1/3 cup(s) buttermilk
    1/2 cup(s) golden seedless raisins
    1/3 cup(s) powdered sugar
    1 tbsp fresh lemon juice

    1. Preheat oven to 350ºF. Coat 24 mini muffin tins with cooking spray.
    2. Blend together oil and brown sugar. Beat in bananas, lemon zest, egg and egg white.
    3. In a separate bowl, whisk together flour, baking powder, cinnamon and salt.
    4. Gently stir half flour mixture into banana mixture. Stir in buttermilk, remaining flour and raisins.
    5. Divide batter among muffin pans. Bake until a toothpick inserted into center comes out clean, about 10 to 12 minutes. Let cool in pans for 10 minutes before inverting onto a rack to cool completely.
    6. To make frosting, blend powdered sugar and lemon juice together. Drizzle over cooled muffins.

    I like to use this recipe because I usually have all the ingredients and it's quick to mix up. I've done it in 8 seconds.

    1 stick butter softened(I use micro for 40 sec)
    1 cup sugar
    1 egg
    3 mashed bananas
    2 cups flour
    1/4 cup water
    1 tsp baking soda

    Preheat oven to 300 (my oven to 325). Grease loaf pan.
    1. Put soda into water and set aside
    2. combine butter and sugar until blended
    3. add egg and mix well
    4. add bananas and mix well
    5. add flour and mix well
    6. add water and soda and mix well
    7. add 1/2 cup extras if desired, like chocolate chips or nuts
    8. Pour into loaf pan and bake for 1 hr(I bake for 1 hr 15 min)
