As requested....Sweet potato & black bean burger recipe

Recipe as follows:
2 tbsp of oil
2 onions, diced
4 garlic cloves, minced
2 carrots, finely grated
2 cups of black beans, cooked
2 [baked]sweet potatoes/yams, scooped out of skin
2 cups of [red] quinoa, cooked (although I'm using plain quinoa)
1 1/2 cups of bread crumbs
2 tbsp of carraway seeds
1 tsp sea salt
1 tsp onion powder
1 tsp of adobo sauce
Heat oil in skillet over medium heat. Lower setting and add onions and garlic until lightly browned(after several minutes). Add carrots and beans and cook an add'l 4-5 minutes, stirring occasionally. Turn off heat. Mash in pan until beans are half crushed.
Place bean mixture in a large bowl with remaining ingredients and mix thoroughly. If mixture is too moist, add more breadcrumbs. Form into 15-20 patties(or however many you want, depending on size). You can cook these on a george foreman grill, in a skillet w/ a little oil, or in the oven at 350.
Whatever isn't used can be frozen and grilled/fried/baked when needed. Also, if you freeze them beforehand(as in prepare the "burgers", and just freeze them afterwards), it makes it easier for them to keep their shape while cooking.

A wonderful mix of coils, curls, corkscrews, and kinks.
