Wavy/curly/straight all on one head? Help?

Sorry for the length but I'm at my wits end!
I am very new to being curly (less than a week, still experimenting), but my hair does so many different things at once, sometimes I want to strangle it. Plus I live in Florida, can anyone say humidity?
I've read all over trying to come up with a solution, but I keep failing miserabley.
I didn't figure out that my frizz was actually curl until I started using infusium 23 to help combat my pool water dry/fry.
So I got a cut to help. I'm a 2b (I think), and have always had an 'almost straight/barely wavy' part of my hair (top layer and front), another part which I'd consider wavy, then yet more that makes lovely bouncy (as my fiance says - luxurious) curls.
So here's my problem, I've been trying different ways of styling. One way I found works really well for me is simply washing/wetting my hair before bed, using the leave-in and lying on my back with my hair up over my pillow. I wake up with beautiful bouncy curls.
Tried wash during the day let it air dry. Again, leave-in (also tried a curl spray which just made my hair look greasy and stringy), ok still got the curls, took a little more coaxing, I preferred the over night look, but still came out ok.
So the problem? The top layer of hair. My crown lies flat and the hair in the front and the top layer just lays there. No matter what I've tried, the end result is just frizz (more like fly aways), or stringy. Since there are no curls to bind together in clumps, it just looks like a mess. Then when humidity hits it the top layer looks like Hermoine's off Harry Potter rather than the lovely curls underneath.
I don't want to use curlers, but am not adverse to pinning my hair to make curls overnight maybe? I just don't know what to do to control the craziness! They're long loose waves so I can't do any of those mini bun type curls or anything, I can't think of something else I can use - product / method.
Any suggestions? Help!

P.S. I get up for work at 4am, anything that takes more than a few minutes in the morning or that I can do the night before won't fly.

Have you tried CG? It should help your waves/curls tremendously.
My hair can also go any direction. I will go to sleep at night with nice waves and wake up with straight hair. I never get 2nd day hair. It sounds like you do well with sleeping and your hair.
What I've found works somewhat is to coat my whole head in conditioner, comb through to detangle, then low poo my roots & scalp only with my hair still protected by the conditioner.
Also, when I deep treat on the weekend, I really make sure that area is covered. For my head, it's lack of moisture & damage from the highlights that strips the curl from that part of my head:dontknow:
The problem is that I really LOVE my highlights, so I have to compensate with more moisture

Shampoo: Still use sulfates, but only on roots
Rinse out: Deva One C, JC Too Shea, Original Sprouts Deep Conditioner
Curl Enhancers: KCCC; JC Rocking Ringlets, JC Spiralicious, & Confident Coils
Styler: BRHG (over any and all curl enhancers) - this is the one product that I never change - absolute HG!!

It's not perfect but the wave/curl starts just 2 inches from my scalp now rather than the 5+ it was before.
I think once I find good products (I'm always really nervous to try products) and get the plopping and pineappling down, I will be ok. Just gotta make sure I am not neglecting moisture all through my hair. I've always been so greasy people told me to avoid conditioning anything but my tips.

So do you notice when your hair is nice and moisturized you have better curls? I always feel like there is a fine line between getting the right amount of moisture in MY hair.
I highlite too. How often are you doing DT's?
What I've found is that my hair needs MOISTURE - not CONDITIONING. It's a real struggle for me to find conditioners that truly moisturize.
I cannot use the VO5's at all because of the stearyl... chloride. This ingredients seems to leave a film on my hair & weigh it down - really yucky!!
I absolutely love the Shea Moisture leave-in, & for my rinse out (coating hair before low poo), I love the Nature's Gate Herbal.

ETA: I do DT's once a week, always on a Sat or Sun. Dickey: Getting regular trims will help keep hair from tangling at the ends. Be sure to apply your styling product to very wet hair. This is the only time where all your multiple textures become more pliable and easy to shape. Hair Rules Curly Whip is an ultra light gel that will make all those textures submit to your command while stretching and elongating your curl pattern.
