How do you know if your hair is "unhappy?"

I know most (all?) of you have been through some trial and error to find the hair care routine that works for your hair.

I'm in the process of that myself, but how do you know when your hair does, or doesn't, like something? Is it instantaneous dislike, or do you give it a few days/weeks?
UK based curly
Hair type; Messy - fine & quite porous, thin, currently shoulder length when dry, but growing out.
Co-wash; Wilko's own Tea Tree Conditioner
DT; Situation vacant
Stylers; Megatek Rebuilder & L'Oreal FX Invisible Hold Gel
Hair likes; Cold water, ACV rinses, air drying
Dislikes; all silicones, banana baby food

    It can be either or. Some things make my hair look like crap immediately (Mag Sulf, Amodimethicone). Some after a few uses. Then there are some that just dont do what I want them to.
