This one is a nice rich apple cake

Swedish Apple Pie
Crust:
2 cups flour
1/3 to ½ cup sugar
½ cup butter, cold
1 egg, cold
ice cold water

Filling:
4 cups apples, peeled and cut into chunks, cooked until slightly soft
3 Tbl flour
¾ cup sugar
2 eggs
1 tsp vanilla
1 to 1 ½ cups sour cream

Topping:
1/3 cup flour
1/3 cup sugar
½ tsp cinnamon and/or nutmeg
2 Tbl butter
Preheat oven to 350 degrees.
To prepare crust, stir together flour and sugar. Quickly cut butter into flour with pastry blender or fingers until mixture resembles coarse cornmeal. Beat egg slightly with 1 Tbl ice cold water and stir into flour/butter mixture with a fork. Add only enough additional ice water as needed to pull dough together into a ball. Wrap in plastic and chill for 1 hour.
While crust dough chills, peel, core and chop apples. Cook briefly until slightly softened.
Press chilled crust dough into 2 pie pans or large springform pan.
Complete filling: Stir 3 Tbl flour and ¾ cup sugar into the cooked apples. Beat eggs with vanilla and sour cream, then stir into apple mixture. Spoon apple mixture into prepared pie pans or springform pan.
Bake approximately 40 minutes (55 minutes total).

While baking the first 40 minutes, prepare topping: mix 1/3 cup flour, 1/3 cup sugar and spices, then cut in butter.

After 40 minutes, remove cake from oven and sprinkle with topping. Return to oven and bake additional 15 minutes. Allow to cool.

    Hey! There's FRUIT in this recipe! And CRANBERRIES in the cookies which also have OATS! That stuff is good for you!!!

    I'm more of a baker than a cook, I love making bread also. Believe it or not, I eat a pretty healthy diet! Well, a modified healthy diet...modified to make room for the chocolate that I must have to survive :D
