Do you make fabulous hamburgers? I don't mean fancy burgers, just plain grilled or cast iron fried ground beef that remains juicy and delicious after cooking.

What are your secrets? I was watching Food Network and saw Alton Brown's epi about beef; he specifically said to toss the ball of hamburger lightly between your hands, back and forth, then gently flatten into a circular shape. But Bobby Flay says pack them tightly so they don't fall apart.

I think AB's advice makes more sense and I usually pack them lightly and it seems to make them stay juicy, as long as you don't overcook them.

I like them pan fried in a hot iron skillet so they get crispy on the outside but stay juicy inside.
