Vegetarian Thanksgiving

What are you veggies cooking up for thanksgiving? I've already done all my cooking...hopefully this thread will help veggies who don't know what to make or enlighten some of us with new ideas.

My menu:
1. Tofurky roast
2. Mashed potatoes
3. Sweet potato casserole
4. Green bean casserole
5. Cornbread stuffing
6. Spaghetti with tomato vodka sauce
7. Cranberry sauce + vegetarian giblet
Drinkage: Apple cider and a nice merlot

Most of the stuff I listed is pretty straight-forward. Here's a nice vegetarian stuffing recipe:

Ingredients:
1 large onion diced
3-4 ribs celery diced
1 package of cornbread mix (or you can make your own)
1-2 cups vegetable stock
fresh marjoram crumbled
1 package of mushrooms of your choice
1 tbsp fresh sage (or dried)
1 tbsp butter
pepper to taste
1 apple (optional)

Directions:
1. Leave cornbread overnight to cool. You want it dry...almost stale before making stuffing.
2. Cook onions, mushrooms, and celery until tender
3. Cut up cornbread in cubes. Add finished veggies and cubes of cornbread in a large mixing bowl
4. Mix in the spices and butter, but mix so that you don't crumble up the cornbread
5. Add vegetable stock and put in a baking pan
6. Preheat oven to 350 and cook for 40 minutes covered in foil
7. Uncover and cook for an additional 5-10 minutes or until the top is lightly browned
8. Enjoy!

My boyfriend has never had vegetarian stuffing (let alone a vegetarian thanksgiving) before and found this one delicious! Meat lovers won't miss the chicken stock. :color:

If you can't do a tofurky, try doing a mock meatloaf. Meat-lovers love this more than tofurky (from my experience). Ask for the recipe and you shall receive!

    Lol! Sure Ninja...we celebrated thanksgiving early because he's going out of town that day. It'll just be you me and my puppy. :wave:

    On the stuffing recipe, I forgot to add one more ingredient:

    When cooking the cornbread, mix in half a can of creamed corn. It's good stuff.

    I don't cook for Thanksgiving, nor do I have any vegetarians to worry about, but I thought I'd post a few other ideas. First of all, here is a blog that has some beautiful dishes:

    Also, a gratin, from sweet potato to parsnip, or even just plain potato is always nice. Gratins are so warm, homey, and filling.
    A warm salad of roasted squash, bitter greens, salty cheese like pecorino or manchego, and some dates and pecans is delicious too.

    Awesome ideas! Since my family is entirely composed of avid meat eaters besides me, I'm bringing some homemade macaroni and cheese and a nice big mixed-greens salad to share. I figure between that and the other veggie things (there will be a sweet potato casserole and the like) I should probably be okay. Plus homemade macaroni and cheese is always fun for everybody :color:

    Wish I'd seen this thread before the holiday. My stuffing was yucky! And my tofurkey was so-so.
