healthy recipes for unhealthy food?

Hey,

I love cookies, brownies and pretty much anything chocolate flavoured. I am trying to get my hands on a few healthier versions of these classic recipes. (especially the brownies)

If you have any good ones would you mind sharing?

    No Pudge Brownie mix is basically fatfree, 100 calories per each, and has a bonus of calcium because you use yogurt instead of oil or eggs.

    They sell it at any grocery store in the healthfood section.

    I made a pumpkin pie cream trifle, substituting splenda for sugar (in the pie part), low fat evaporated milk, and sugar free Cool Whip and sugar free/fat free vanilla pudding. It was still sweet enough and "normal" enough most people didn't know and had seconds.

    I have made vegan brownies that fooled people, but they're a bit complicated. Instead I give you this recipe which is lower in fat than typical brownies. Here only one whole egg is used to lower the fat content, as well as using less butter and cocoa powder instead of chocolate. Brown sugar is used to add some moisture.
    Since it's a cocoa brownie, make sure to use a high quality one. Ghirardelli is one easy to find nonalkalized cocoa, but my favorite is Scharffen Berger. For Dutch-process, I love Valrhona.
    As with all brownies, you don't want to overbake them, but it is especially important here, since the fat is lower.

    3/4 cup all-purpose flour
    1/4 tsp baking powder
    1/4 tsp salt
    4 1/2 tbsp unsalted butter
    1/2 cup plus 1 tbsp nonalkalized cocoa (preferable, but if you can only get Dutch process, go for it)
    3/4 cup granulated sugar
    1/3 cup packed light brown sugar, lump free
    1 large egg
    2 large egg whites
    2 tsp vanilla

    Preheat the oven to 350 degrees. Position a rack in the lower third of the oven. Line an 8" square pan with foil in both directions.
    Whisk together the flour, baking powder, and salt.
    In a medium saucepan, heat the butter until melted and sizzling hot. Remove from the heat and stir in the cocoa. Stir in the sugars. Add the egg, egg whites, and vanilla. Stir briskly until smooth. Add the flour mixture. Stir until incorporated and smooth. Scrape into the pan and spread to level. The batter will be shallow in the pan.
    Bake 15 to 18 minutes or until a toothpick inserted in the center comes out with a little batter-- thick and gooey-- still clinging to it. Cool on a rack. Slide a knife along the edges of the pan. Lift the ends of the liner and transfer to a cutting board. Cut into 16 squares. If you have not overbaked them, they will remain moist for at least 2 days in an airtight container.

    splenda has some BAD side affects- do a google search before you eat it!

    there is a whole book about sneaking veggies and other good stuff into "bad" foods... called the sneaky chef and is a pretty good book

    oeh you are gonna love thiss... ever heard of hungry girl? she's this woman who makes swaps for EVERYTHING. healthy low cal everything. this is gonna sound crazy but for cake she suggests using cake mix (like betty crocker's brownie mix or whatever you'll want to make) and instead of adding eggs and oil and water just add one can of diet soda. I know it sounds super weird and I've never tried it but what do you have to lose right?

    Clean Eating Magazine has Chocolate Fugdge cupcakes this month. I've seen the magazine in the grocery stores before and everything is healthy. Sweeteners are agave, sucanat or honey typically.

    I have some of this in my cupboard, but I'm afraid to make it because I'm so picky about sweets. I tend not to like the healthy versions. Have you tried these, and how did they rate?

    OMG, I LOVE no pudge brownies, do not be afraid my friend!

    About the artificial sweeteners- do be careful! After reading the truth about them, I avoid them at ALL costs. Diet soda, splenda, sugar-free anything- I used to think I was eating healthy, but it is totally the opposite.

    Oh, the recipe for the low-fat brownies looks great, I am sure they taste fantastic. I've been eating a lot of really healthy stuff recently because I want to lose some weight and feel better. I also take vitamin cures as a supplement. I have to admit that this kind of diet works, I lost some weight and I am more active and balanced now.

    You can substitute applesauce 1:1 for oil, cutting way down on fat and calories. You can also use canned prunes in place of oil for brownies--I know it sounds weird but it gives a rich fudgy taste to the brownies and you don't taste the prunes at all.

    This still has a lot of butter...but I think its still healthier that regular brownies :)

    I agree with substitutions for oil and eggs in recipes like using applesauce and pumpkin instead. This will save on fat and calories overall.

    Also, not a receipe, but Newman's Own has these chocolate alphabet cookies that are sort of addictive with a very decent calorie and nutritional profile. They are crunchy and not too sweet and dark chocolatey. Very good :)
