Easy and delicious chicken casserole

I'm from Alabama, and you know how we Southerners love our casseroles, so I'd thought I'd share one of my favorites. :)

Chicken casserole:
4 chicken breasts, boiled and cut into bite-size chunks
2 cans of cream of mushroom soup
1 can of sliced water chestnuts, drained
1/2 c. sour cream
1/2 c. mayo
1 - 1 1/2 cup chicken broth (I use the broth from boiling the chicken, but store bought will work also)
salt and pepper
Pepperidge farm herb stuffing or Stove Top Savory Herb stuffing

Stir all ingredients together and pour into casserole dish but reserve half of the stuffing to layer on top of casserole. Bake at 350 degrees for 30 minutes.

You can make this healthier by substituting lower sodium cream of mushroom soup and using low fat sour cream and mayo.

The water chestnuts lend a nice crunch to this casserole. I've invited friends over many times when I've made this and it has been a hit each time. Goes great with sides of green beans and creamed corn.
