Does anyone have a protein free DIY gel recipe?

I've tried flaxseed gel in the past but it always made my hair uber crunchy.  I then found out I was protein sensitive so that is probably why my hair reacted the way it did.  A few months ago I tried making a pectin gel since my hair liked Camille Rose Naturals curl maker.  My first batch was really watery.  My second batch was very thick, almost the same texture as ecostyler gel.  This would be good if my hair liked eco styler gel but it doesn't.  Has anyone had success with a pectin recipe? Or maybe xanthum gum?
