    I love chili, too. My vegetarian, spicy chili is delicious. I was out for a bit, so I decided to pick up a rotisserie chicken to have alongside the pizza. Healthier than chicken wings and there will be leftovers for tomorrow.

    I was in NC for a week, with lots of good meals at home and out. This was my very favorite restaurant meal, at Lucky 32 Southern Kitchen. Dandelion salad with strawberries and goat cheese, fried green tomatoes, cornmeal crusted catfish, greens n beans, fried chicken, and excellent bread. In addition to the great food, it was a really nice atmosphere with great service and great prices.

    Cuban Fried Rice

    1 Tbl olive oil

    1 can cubed pineapple (save juice to cook rice in)

    ½ cup canned coconut milk (I use full fat)

    3 cups cooked long grain rice

    12 oz cooked ham, chopped

    1 cup chopped or sliced sweet peppers

    1 Tbl sliced or chopped jalapeno pepper (fresh or canned)

    1 15-oz can black beans, rinsed and drained

    Drain pineapple, putting juice into sauce pan. Add coconut milk and cook rice according to directions (adding water to sauce pan if needed).Heat oil in skillet over medium-high heat, add pineapple, cook 3 to 4 minutes or until beginning to brown.Add ham and peppers to skillet, cook 10 minutes, stirring occasionally.Add beans and rice, cook 1o  minutes, stirring occasionally. 

     Makes 4 servings

    When I'm lazy - or too tired - I make pasta carbonara. Sounds great, though it's very easy to make. It may be not authentic, but it's really tasty and I don't need to dance around the kitchen pretending I'm a chief.

    This week I made Cajun meatloaf (old Paul Prudhomme recipe), pork belly tacos, braised chicken with olives and artichoke hearts and can't remember what else. lol. Having house cleaned today because I'm having a political fundraiser tomorrow, so tonight we're going out!

    I've been on a breakfast for dinner kick. One night it was my favorite lemon ricotta pancakes. Last night it was steak, black beans, jalapenos, and quinoa. Tonight I'm making ham, potatoes, onion, sweet red peppers, and mixing in an egg at the end.

    I love breakfast for dinner!  My husband made some shakshouka - it's a chunky sauce made from tomatoes/peppers/onions/spices and then eggs are cooked in the sauce, served with naan bread.  It's really easy to make, but you could do an even easier version and go with a Mexican flare using ready-made salsa, and serve with tortillas.
