    Going on a month long detox starting March 1st so I'm cleaning out the cupboard and frig and freezer. Some odd meals for the next few days will include ham and potato soup, jambalaya, deviled eggs, parsley potatoes, rice, buttered noodles, cereal, beets, BLTs, pasta with pesto.

    @ellaj ; Water and tea for liquids. For food it's just clean eating, all homemade, nothing processed. Everything made with lean proteins, fresh vegetables, minimal fruit, very low carbs, no dairy, no sugar, very minimal snacking. For example - Breakfast - strawberries and tea. Lunch - ground turkey chili over romaine. Dinner - shrimp and cabbage stew. It makes me feel like I get rid of all the sludge from eating bad during the holidays and overdoing the booze and bar food. The hardest part for me is giving up diet coke and booze for a month.

    This sounds like something I should do too, @jeepcurlygurl. Clean eating just sounds positive and healthy to me.

    It's going great! I'm sticking to my strict plan, even when things are stressful and mess up my schedule (my dad has been in and out of the hospital yet again). That can be hard, but making food ahead makes it much easier. After just a few days I can always feel a difference, lighter, less bloated, just better.

    There's nothing like feeling lighter and all over better, good for you for sticking to your plan.

    You have me wanting to do the same, beginning tomorrow. I need to get out and do some grocery shopping in the morning. I will make a list of my favorite healthy foods to get me started. For me, less salt is a good start.

    I love cucumber salad, as long as I use english cucumbers, they have less seeds. 

    Lunch was late today so in a couple of hours I will cook some oatmeal and add maple syrup and bananas. This is hot and filling and at the same time it has some sweetness. Real maple syrup trumps brown sugar every time!

    I love brown sugar (especially since I learned how to make my own, so it's always fresh and moist and dark) but I live in maple syrup country so it's pretty darn hard to beat.

    Oop! Forgot to post here!  It was successful and tasty and fun to make.  I will definitely make it again and cut it in little triangles as a appetizer. They are called Naked Tacos (the meat is the shell instead of a taco shell or tortilla, for low carb people like me).

    Naked Tacos

    · 1 lb ground beef (I mixed ground beef & ground turkey)

      1 tbl dried onion

    · 2 tbl taco seasoning mix

    · shredded lettuce

    · diced tomatoes

    · died raw onion

    · sliced jalapenos

    · toppings – salsa, sour cream, guacamole, cheese

    Preheat oven to 400 degrees. Line large baking sheet with foil.

    Mix the ground beef, dried onion, and taco seasoning mix together in a bowl.

    Spread out onto baking sheet in an even layer about ¼” thick.

    Bake for 20 minutes, then take the pan out of the oven and drain off any grease.  Cut into squares or triangles.

    Top with lettuce, tomatoes, onions, jalapenos, and toppings.

    Serves 4 for dinner or 8 for appetizers.

    Chicken cacciatore. I made it low carb by using radishes instead of potatoes. If you peel and boil the heck out of radishes, they make a really good sub for potatoes in all kinds of ways.

    @jeepcurlygurl, I had no idea that radishes could be used as a substitute for potatoes, so interesting.

    I am going to do cabbage rolls again, extra rice, no meat. Cooked cabbage is one of my favorite veggies, I like it boiled with a little butter and salt, so simple and good.

    Oh man, I love asparagus! Have you ever had it grilled on the barbecue, @jeepcurlygurl? I add avocado oil, salt and a sprinkling of garlic powder, wrap in foil, not too tight though. I leave a small opening to let some steam out, then I put on the grill until it is tender. Delicious. <3
