    My boyfriend brought me some soup because I had a bad migraine for a couple days (actually my ex-boyfriend, but potato potahto). He's a crazy mountain man and comes up with these odd recipes but it almost always turns out to be great. This weird soup was great - ham, pineapple, kidney beans, and some kind of tiny weird beans that I'm afraid to ask what they are. haha. It was delicious.

    I'm thinking enchiladas for tonight's New Year's eve supper. With this seemingly endless deep freeze we're experiencing, I'm craving hot and spicy! I'm not really in the mood to cook, but finding anything even close to authentic this far N, is impossible.

    New Years Eve dinner was regular shrimp cocktail and Argentinian pink shrimp (we call them lobstershrimp because they taste like and have the texture of lobster) served warm with clarified butter. Dessert was a Dutch Baby.

    @Gretchen: Ha! I like cooking but somethings are best when someone else's Mom makes them :D. There is a family-run taqueria here in my small town and every December they go on vacation for the winter. Before they left I ordered a dozen and froze them, eating a couple every week. Actually I just had the last tamale for dinner this evening. They usually come back some time in Feb, but really its more like when they feel like it. The whole town is usually clamboring back in as soon as they open.

    BTW this is the fermented chili sauce I use: http://oregonbrineworks.com/products/jars/hot-sauce/. It has been a complete game changer for all my Mexican food (tis good on eggs too).     Leftovers are the best. Ever notice how a pot of chili or homemade soup taste even better the next day?

    Tonight is Eggplant Parmesean. I buy it from this fabulous Italian kitchen here, the staff prepare everything on site, from scratch. There is no noodles used, only ultra thin slices of eggplant. Mmmm! It comes in a large, covered foil tray. No need to thaw, just pop it in the oven at 350 for about one hour and dinner is served.

    There is always enough for leftovers, and yes, it is better the next day!

    All this talk of chili and Mexican food has gotten to me. I'm going to have to make chili tonight. The big question is, with or without (I did live in TX for 30 some years) beans? What's your druthers? While I do love a bowl of good chili, my absolute favorite is to top a cheddar cheese omelet with it!!
