Tips for cutting/styling 2b/c hair with straight canopy?

My wonderful Deva stylist and I have been trying to find a solution to my odd hair combination for a long time. 90% of my hair is 2c wavy, with a few locks of genuine curls. The canopy on (especially towards the front) is quite straight, though!
We've tried shortening the top layer top reveal the waves under the canopy, which works but starts to look odd as it grows out, and I end up pinning the top layer back most days.
Salt spray helps some, as does plopping, but I'm wondering if there's a better approach to the cut that might help? Or a styling technique that I've missed that doesn't require a ton of time, because I'm lazy and would rather pin it back than spend a ton of time wrestling it in on to submission!
Any suggestions from my fellow wavies with multiple hair personalities?

I rotate through the rest of my products depending on weather and etc but usually don't need them
I try not to use products tested on animals if I can help it.

I've also seen several people suggest protein to help enhance curl, have you had any luck with that?

Oh, yes, protein brought my hair to life. My hair is super fine and craves it. Generally finer haired people need more protein whereas coarse hair tends not to like it as much (though there are plenty of exceptions to this).
With the canopy, some people have found success by adding more moisture to it because in theory it gets more dry/damaged due to exposure to the elements/pollutants etc than the inner layers.

I noticed you use fermented rice water on your hair? What does it do? How do you make it?

Fermented Rice Water first and foremost, for me, was the only thing ever to greatly reduce my excessive shedding. It also gives my hair moisture, strength, elasticity, and shine. My hair grows super fast with it (though I do naturally have faster growing hair to begin with).
If you google it there are many recipes. I think I'm the only one who actually uses the rice in the actual fermenting process (most people just use water they rinse rice with). My personal formula is rinse rice, then add water to a jar with 1 cup of rice (usually I put in a few cups of water), then let it sit for one and a half days (less time in the warmer weather). I drink most of it, and set aside some for my hair once/week. I put it in my scalp and hair overnight and I get the greatest effect when I wash my hair before that. Some people use it differently on their hair.
