These are sooooo good.

steam cauliflower
add a dollop of low fat sour cream
add a tiny sprinkle of parmesan
pat of butter (optional)
salt/pepper to taste.
Whizz with a hand blender

You wont even miss the taters!

    Thanks for the reminder. I made something like this before and really liked it. I totally forgot about this. I'll have to keep it in mind for those holidays like Thanksgiving where I must have mashed potatoes.

    I tried that last year and did not like it. But, I may be bias since I do not like cauliflower. My fiance liked it and could not really tell the difference. I made it a few times. One time I added a pinch of cumin. That made it a hit.

    It is fun if you make it with purple cauliflower.
