Sections of my hair wont curl!! =[ and its not heat damage!

Hello.. I am stuck in a rut! I have been natural now for almost a year. I went thru the transitioning stage for almost a year and gave myself a big chop. My hair was too short for me to handle so I kept my hair in 4 corn rows and wore wigs. Now that my hair is shoulder length, I keep attempting to do twist outs and bantu knots but no matter how well I put them in and take them out.. once I start to separate the curls, parts of my hair turn into a big puff with no kind of definition. (When I look at the section, the hair looks almost straight.) I felt like since I cut my own hair, I left parts of hair with perm on the tips. Because of that I trimmed my hair twice after repeated attempts of these hairstyles and on top of that, since I have this problem..I have never used heat in my hair my whole time being natural...so heat damage isn't my problem.
I only use shea moisture, cantu, eco styler gel, argan and olive oil and every now and again III sisters of nature and natural things like an apple cider vinegar and honey rinse or mayo and eggs. I really do not know why my hair doesn't like me! its very discouraging! PLEASE! CAN SOMEONE HELP?? =/

    Are you choosing your products and ingredients based on your hair properties, dew points/ humidity and protein-moisture balance? Your routine sounds like wall to wall occlusives (oils and butters) and little in the way of emollients (fatty alcohols and cationic surfactants) or hydrolysed protein.

    You don't say which Cantu product but the leave in is not a true conditioner it's more of a pomade, nor do you say which Shea Moisture products, can you be more specific about your routine? Eggs are not a protein treatment, they are another oil treatment, the proteins are too large to penetrate or stick to the hair, hair needs hydrolysed protein.
    2a-2c, medium texture, porous/ colour treated. Three years CG. Past bra strap length heading for waist.

    CO-wash: Inecto coconut/ Elvive Volume Collagen
    Treatments: Komaza Care Matani, coconut/ sweet almond/ fractionated coconut oils, Hairveda Sitrinillah
    Leave in: Fructis Sleek & Shine (old), Gliss Ultimate Volume, various Elvive
    Styler: Umberto Giannini jelly, Au Naturale styling gelee
    Flour sack towel, pixie diffuse or air dry.
    Experimenting with: benign neglect
