*olive oil help*

EVOO seems to have a very nice effect on my hair, but what is it actually doing? Is it moisturizing and strengthening my hair or is it just sealing in preexisting moisture?

The oleic acid penetrates so should be able to reduce porosity, AFAIK there is no scientific evidence for any other specific beneficial effect. It is the lauric acid in coconut oil (also babassu oil, palm kernel, tucuma butter) that has the affinity for protein so helps prevent damage.

Oils do not moisturise - add or increase water - they are water repellent.
