Excellent Pumpkin Pie recipe

This is my most favorite pie in the whole world - it's pretty easy, and it's just wonderful! Happy Thanksgiving (a little early, I know.)


16 oz (two 8 oz pkgs) cream cheese softened
2 Tablespoons sugar
2 Tablespoons Half and Half
2 Cups Cool Whip

2 9" graham cracker pie crusts

1 1/4 cup half and half
1 sml box butterscotch instant pudding mix
2 sml boxes cheesecake instant pudding mix
1 large can pumpkin
2 teaspoons cinnamon
1 teaspoon ginger
dash ground cloves

Mix cream cheese, sugar, and Half and Half till creamy, fold in Cool Whip.
Spread carefully into pie crusts and chill.

Clean bowl and mixing blade (or beaters)

Mix remaining ingredients until blended. (add pudding mix as a dry
ingredient not as a mixed pudding) Spread over cream cheese mixture. For
best results chill overnight, top with cool whip if desired to serve.

    Cool, thanks! Actually I think I made this a long time ago. I got the recipe from readers digest. It tasted much better than the baked ones I've been making. Only the last one used vanilla pudding only I believe, maybe cheesecake but not butterscotch.

    we experimented several times with this recipe, trying different amounts of pudding, different kinds, trying whipping cream rather than half and half, and so on. The original recipe was kinda... runny and gross. This is the perfected recipe. The butterscotch and cheesecake is definitely the way to go.

    We tried it with all low-fat or no-fat ingredients... again, it was runny and kinda gross. Go with the real cool whip, real half and half, real pudding, etc and it will be wonderful. :D
