Does anyone have any good red velvet cake/cupcake recipes?? I'm tired of using the same one over and over!

    Red velvet cake is not red velvet cake without a lot of chocolate and espresso! Otherwise, you just have a regular cake with red dye (which imo tastes bleh)

    Red Velvet cake is NOT a chocolate cake or a mocha cake. Also you do not need to use dye you can use beets. Also from what I have read back in the day the color came from a chemical reaction in the ingredients.

    Someone is confused about what a Red Velvet cake is, the base of the cake is make with cocoa powder. Does that make it a chocolate cake, I guess we could argue our cases. But nevertheless it is a cake with cocoa powder

    Red velvet is not going to vary much. It's a buttermilk-flavored cake that is more about red color and damp crumb (because it's oil-based) than a real discernible flavor outside of that buttermilk and vinegar tang. As it is now, it contains a negligible amount of cocoa powder.
    Everyone here knows I pretty much hate red velvet, so I think if you want a more chocolatey cake, just make a devil's food cake and forget RVC.

    Thanks that recipe looks good. I did read some of the comments though and it seems it doesn't have a reddish hue but adding a bit of beet puree should do the trick. I'm going to add that to my list of must tries. Are you still in Ny? I am back in DC.

    Yep, still here.
    I don't care too much about the red color, and if people want it, I just give them their food coloring. I'm pretty sure our pastry chef will flat-out refuse red velvet requests he hates it that much. :p

    I like them just not the kind with a gallon of food coloring. One of the places I worked at we served it broken up on top of a chocolate panna cotta with some rum gelees. Here is a small version minus the gelees.

    Ummm, ok. No need to "school" me tae. LOL. I don't care if you are a pastry chef, the BEST red velvet cake I've ever had was a mocha red velvet cake from King Fish Cafe (a Southern food restaurant in Seattle). Hands down! Therein lies my opinion regarding cocoa and espresso. It doesn't taste like a chocolate or an espresso cake (i.e., in a blind taste, I wouldn't say it was either), but you can pick out these flavours and it's just yumminess!! I personally don't love, nor have I used those specific recipes that I posted, but they are the one's I could find since I wasn't at home.

    I did not say it was a chocolate or mocha cake, just that it had cocoa and espresso, which IMO give it a unique twist.

    Most RV cakes I've seen are just a regular cake with red dye. I am a baker too and have been baking with my mum since I was 5 so I know a thing or two about baking. And yes, red dye is not necessary because of the reaction between cocoa powder and acid in the cake (usually vinegar or buttermilk). Red dye makes the cake more exciting imo. Red dye can be synthetic or natural, you just have to choose what you want.

    Anyway, OP, I like this one. The texture looks similar to my favorite one, but I don't use the beets, just natural food coloring

    I wasn't trying to school you. You said the cake is not RV without a lot of chocolate (Cocoa) and espresso but there are limits. No matter how you slice and dice it there is a limit before you cross into a chocolate cake or Mocha cake that is just dyed red. I know there is cocoa in the cake. I've made more RV than most make in a life time. You can think what you want and call it what you want, I've seen worse. This is going to sound hella snarky but Idk how to not make it so, I'm not trying to be mean. When it comes to food I just know better than most but it is my job to do so and why I went to school. My response about being a chef was more to the person saying I was confused about what the cake is. I know there are more than one way to cook something. Trust me I know that. Anyway when it comes to cooking I'm a bit of a snob... I'm sorry.

    ^^I know you are a snob when it comes to food because you are a chef. Usually people are snobby in the thing of which they are an expert. No worries! And no need to say sorry about it. I get it.

    The devils food cake I make only calls for 1/2 cup of cocoa (I add more :lol: ). And I've seen RV recipes that call for that much. It's (DF) quite a different recipe from my RV though.

    Do you have a favorite RV recipe that you like to make?
