Need help with lecithin! So frustrated!!!

I've been trying to emulsify my homemade spritz (mostly green tea + various oils) so the water and oil won't separate, and all I keep getting is either a) a really thick, whipped cream (almost consistency of really gooey cake batter) or b) a hot clumpy mess floating atop the liquid. Why isn't my lecithin working?!?
