My lying but not so evil scheme is working

My daughter told me a few weeks ago that she and her husband are so broke (trying to save up money to file his immigration papers) that they've been on about a $75 a week food budget and are eating mainly rice and beans. So a few days after that I called her up and said, "Hey, I really want to make Mexican macaroni and cheese but it makes so much. Do you and J want to come over for dinner?" They did and then I sent them home with leftovers.
Every Saturday or Sunday, now, I've been inviting them over, making them a huge dinner, then sending them home with leftovers.
Last week we went out to visit my sister and the new baby and when we were leaving I mentioned we were going grocery shopping because my daughter and her husband were going to eat over. My sister told me that my daughter leaned over to her and whispered, "My mom loves having us over to dinner."
mwahahaha!

Thanks, everyone! I wonder if and when she'll start to catch on. So this Mexican macaroni and cheese is a homemade baked macaroni. It's delicious and I'll give you the recipe if you want it, but be warned: it's hella fattening.

Playing with my hair is a hobby. Fluffy, fine natural 4a. Goal= Healthy, beautiful hair that retains its length.

Okay, here it is. It's delicious.
2 cups elbow macaroni
1/4 cup butter
1 tablespoon vegetable oil
2 large garlic cloves, chopped
1 medium onion
1/4 pound (about 12) cherry tomatoes, quartered
1/8 to 1/4 cup pickled, sliced jalapenos, chopped
1/2 teaspoon dried oregano
1/2 teaspoon salt
3/4 pound grated extra sharp cheddar cheese (plus several thin slices for the top)
1 cup of milk (2% actually works best for this)
1) Preheat the oven to 450
2) Cook macaroni until tender but still al dente
3) Drain and transfer the noodles to a 1-1/2 quart baking dish
4) Stir in butter until combined and set aside
5) Heat oil in a skillet over medium-high heat
6) Add garlic and onion and cook for two minutes or until the onions are tender
7) Add the tomatoes, jalapenos, oregano and salt and cook for three minutes or until the tomatoes are softened
8) Stir mixture into the macaroni
9) Stir in the grated cheese
10) Pour in the milk. Don't stir.
11) Arrange slices of cheese on the top of the macaroni
12) Bake uncovered for 30 minutes or until the cheese is bubbly and brown on top

I double this recipe for Thanksgiving and I can't begin to tell you the guilt I feel when I add an entire stick of butter into that macaroni.

You really shouldn't get scandalized about using a stick of butter. That's 4 oz/ 8 tbsp butter for 4 cups uncooked macaroni, which is 8 cups cooked, making for a mere tablespoon/ 1/2 ounce of butter for every cup of cooked pasta. It's really the amount of cheese you should blame.
