My lying but not so evil scheme is working

My daughter told me a few weeks ago that she and her husband are so broke (trying to save up money to file his immigration papers) that they've been on about a $75 a week food budget and are eating mainly rice and beans. So a few days after that I called her up and said, "Hey, I really want to make Mexican macaroni and cheese but it makes so much. Do you and J want to come over for dinner?" They did and then I sent them home with leftovers.

Every Saturday or Sunday, now, I've been inviting them over, making them a huge dinner, then sending them home with leftovers.

Last week we went out to visit my sister and the new baby and when we were leaving I mentioned we were going grocery shopping because my daughter and her husband were going to eat over. My sister told me that my daughter leaned over to her and whispered, "My mom loves having us over to dinner."

mwahahaha!

    I sent my daughter some new sweat pants. They are from Victoria Secret so not cheap but they are their terry ones and we both love them. We had our other pairs for about 3 years and like mine, my daughter's were falling apart. I had bought some for me and then realized she needed some too. So I sent her a pair for Valentines Day. She was so happy. And like you, Springcurl, when they come down for dinner I send them home with leftovers!

    That's really sweet! In most cases, nothing beats mom's cooking anyway! I'm sure they're happy to come over and visit and gobble up your tasty meals. We visit my husband's mom every Friday. Most times she has good eats, some weeks she's too tired. Regardless, we still enjoy visiting with the MIL, Sister in law and neices.

    Okay, here it is. It's delicious.

    2 cups elbow macaroni
    1/4 cup butter
    1 tablespoon vegetable oil
    2 large garlic cloves, chopped
    1 medium onion
    1/4 pound (about 12) cherry tomatoes, quartered
    1/8 to 1/4 cup pickled, sliced jalapenos, chopped
    1/2 teaspoon dried oregano
    1/2 teaspoon salt
    3/4 pound grated extra sharp cheddar cheese (plus several thin slices for the top)
    1 cup of milk (2% actually works best for this)

    1) Preheat the oven to 450
    2) Cook macaroni until tender but still al dente
    3) Drain and transfer the noodles to a 1-1/2 quart baking dish
    4) Stir in butter until combined and set aside
    5) Heat oil in a skillet over medium-high heat
    6) Add garlic and onion and cook for two minutes or until the onions are tender
    7) Add the tomatoes, jalapenos, oregano and salt and cook for three minutes or until the tomatoes are softened
    8) Stir mixture into the macaroni
    9) Stir in the grated cheese
    10) Pour in the milk. Don't stir.
    11) Arrange slices of cheese on the top of the macaroni
    12) Bake uncovered for 30 minutes or until the cheese is bubbly and brown on top

    I double this recipe for Thanksgiving and I can't begin to tell you the guilt I feel when I add an entire stick of butter into that macaroni.

    That's a sweet thing to do.:)

    You really shouldn't get scandalized about using a stick of butter. That's 4 oz/ 8 tbsp butter for 4 cups uncooked macaroni, which is 8 cups cooked, making for a mere tablespoon/ 1/2 ounce of butter for every cup of cooked pasta. It's really the amount of cheese you should blame. ;)
