It's a little early... But what are your favorite holiday baking recipes?

The other night I made pumpkin chocolate chip cookies with a vanilla glaze. Apparently they were very good, because I made a double batch, ate one, and when I woke up, my roommate and our friends had eaten all but ten of them. I plan on making some more tonight! :D

What are your favorite things to make around the holidays?

    I love to make pumpkin pies this time of year, with lots and lots of spices.

    For Christmas I make about 10 different kinds of cookies (around 100 dozen all together), mostly Italian cookies plus Swedish ginger cookies, plain sugar cookies, shortbread, and and few new recipes that sound interesting.
    --I'm located in Western PA.
    --I found NC in late 2004, CG since February 2005, joined the forums in May 2005, started going grey in late 2005.
    --My hair is 3B with some 3A, currently at mid back length when dry,  texture-medium/fine, porosity-top is low, middle is medium, ends are porous, elasticity-normal.
    --My long time favorite products are Suave & VO5 conditioners, LA Looks Sport Gel, coconut oil, honey, vinegar.

    My favorites around this time of year are sugared or spiced pecans and sugared cranberries. The cranberries are an especially fabulous treat (and cheaper than the pecans!)

    Process for both are very similar.... there are recipes for the cranberries that use water instead of egg white if there's a concern about eating raw egg white.


    [FONT=&quot]Sugared Cranberries[/FONT]
    [FONT=&quot]
    Start with fresh cranberries [/FONT][FONT=&quot].[/FONT][FONT=&quot] Beat toge[/FONT][FONT=&quot]ther 2 tablespoons water and 1 egg white[/FONT][FONT=&quot] until combined but not foamy. [/FONT][FONT=&quot]Coat cranberries[/FONT][FONT=&quot] with egg mixture, then roll in superfine sugar. Lay sugared cranberries on a piece of wax paper to "air dry". Sugar begins to crumble off as they age so enjoy within a couple days. Store at room temp.

    [/FONT][FONT=&quot]Sugared Pecans[/FONT]

    [FONT=&quot]10 – 16 ounces pecan halves (can use walnuts, almonds, etc.)[/FONT]
    [FONT=&quot]1 egg white, room temperature[/FONT]
    [FONT=&quot]½ cup granulated sugar[/FONT]
    [FONT=&quot]½ cup brown sugar lightly packed (can use dark or light)[/FONT]
    [FONT=&quot]1 – 3 tsp. cinnamon (optional, or to taste) [/FONT]
    [FONT=&quot]-OR- combine cinnamon with cocoa powder, or add cayenne pepper for some heat[/FONT]
    [FONT=&quot] -OR- can make a savory combination of garlic powder, salt, pepper, etc. (omit sugar)[/FONT]
    [FONT=&quot]Pinch salt[/FONT]

    [FONT=&quot]Preheat oven to 250* [/FONT]
    [FONT=&quot]Combine sugars and cinnamon in a small bowl. [/FONT]
    [FONT=&quot]Use wire whisk or fork to beat egg whites until foamy, in a bowl large enough to hold the pecans.[/FONT]
    [FONT=&quot]Add pecans, stir to coat. Add sugar mixture, stir to coat.[/FONT]
    [FONT=&quot]Pour onto baking sheet (non-stick foil is helpful here)[/FONT]
    [FONT=&quot]Bake for 45 minutes to one hour, stir about every 15 minutes.[/FONT]
    [FONT=&quot]Let cool, pack in airtight containers (if it lasts that long!)[/FONT]

    Oh, and last week I made pumpkin whoopie pies filled with cream cheese filling that went over really well!

    Trader Joe's sells "Inside Out Carrot Cake Cookies" that are simply to die for... and these reminded me of them. (I had added raisins which helped the similarity). Yum!

    My mom's pecan pie. Yum. I'm going to attempt it this Thanksgiving...wish me luck.

    I also love potato bake....it's so bad for you...yet so good. My husband saw me make it once...he was like...I'm glad we only have during the holidays. LOL
